Eggplant Satay (Vegan)

Eggplant marinated in sereh (lemongrass), shallots, mild red pepper, gula djawa (Indonesian palm sugar), lime, ketjap manis (sweet soy sauce), and on the side peanut sauce and seroendeng (toasted peanuts, shredded coconut and shallots).
